DAT-Schaub sheep casings are the perfect match for fresh and cured sausages. The casings’ delicate bite, strength and texture allow for maximum quality and a smoothly cooking and smoking production of sausages, with a smaller natural casing diameter.
The DAT-Schaub Group sources sheep casings/runners in New Zealand, Australia, the Middle East, China and Europe. Casings are selected and tubed at own facilities and the Group, therefore, is able to supply the widest range of sheep casings for sausage production.
Product application
Every region has its own specific traditional sausages like: Wieners, Frankfurters, Nürnberger, Bratwurst, Knackwurst, Debreziner, Bratwurst, Bockwurst, Merguez, and Chipolata.
Sheep casings are highly heat-stable and have superior frying capabilities, whether boiled or fried.
